The story of this dish
Spätzle are egg noodles closely tied to Swabia in southwestern Germany and appear in written sources since at least the 18th century. The name is often said to come from a Swabian word meaning "little sparrows", though this explanation is not certain.
Traditionally the dough is scraped in thin strips from a wet wooden board straight into boiling water; today many households use special presses or slicers instead. Käsespätzle, the cheesy version, is especially associated with the Allgäu and Alpine regions and their strong mountain cheeses, and is loved as Germany's answer to macaroni and cheese.
