The story of this dish
The Turkish name sütlaç is generally explained as coming from "sütlü aş", meaning "a dish with milk". Rice cooked in milk is known across a wide region from the Middle East to Europe, and milk puddings have a long tradition in Ottoman cuisine, from the palace kitchens to the neighborhood pudding shops called muhallebici.
Fırın sütlaç is the baked version, finished under high heat in clay bowls until the top is speckled with caramelized spots. It remains one of the most popular desserts in Turkish pudding shops and restaurants today.
